Easy Fruit Compote

A simple, delicious way to use up old fruit and reduce waste. This berry compote is perfect for overnight oats and shredded pancakes. It keeps well in the fridge for up to 2 weeks if not longer.

Ingredients

  • 500g frozen mixed berries (any berries / fruit you need using up)
  • 2 tbsp sugar (honey/maple syrup)
  • Juice of ½ lemon (optional freshness)
  • Salt - small pinch

Let’s Dive In!

Stage 1 - Combine ingredients

Grab a small saucepan and place it over medium heat. Add all the ingredients to the pan.

500g frozen mixed berries 

3 tbsp sugar

Juice of ½ lemon 

Salt - small pinch

stage 2 - Cook it down

Let the berries heat up, stirring occasionally, until they start to release their juices. This should take around 10 minutes.

stage 3 - Mash & thicken

As the fruit softens, use a spoon or fork to gently mash some of the berries for a chunkier texture. If you like it smoother, blend it lightly. Let it simmer for another 5 minutes until the mixture thickens slightly.

stage 4 - Cool & store

Remove from the heat and let it cool before transferring to a sealed container. It will continue to thicken as it cools. Store in the fridge for up to 14 days or freeze.

  • Overnight Oats – Swirl it through soaked oats for a fruity boost.
  • Shredded Pancakes – Serve warm over pancakes with a dusting of icing sugar.
  • Yogurt & Granola – A great topping for a quick, healthy snack.
