Breakfast Overnight Oat Fritters

Looking for a delicious and healthy breakfast idea? These Breakfast Oatmeal Fritters are the perfect option to use up leftover overnight oats or made for a weekend treat. This recipe was inspired from my trip to the Dominican Republic where they make the oat fritters for breakfast or a snack. TIP - make the oat batter the night before like you would with over night oats. If you can't 30 minuets will do.

Ingredients

  • 150g oats
  • 1 tsp cinnamon
  • 1 tbsp cocoa powder
  • ½ tsp salt
  • ½ tsp vanilla extract
  • 1 tbsp honey
  • 120ml milk
  • 2 eggs
  • Butter
  • Peanut butter
  • Banana

Let’s Dive In!

Stage 1 - combine ingredients

In a large mixing bowl, combine all the ingredients below together mix until it forms a thick paste. Sit in the fridge for 30 minuets or overnight.

  • 1 tsp cinnamon
  • 1 tbsp cocoa powder
  • ½ tsp salt
  • ½ tsp vanilla extract
  • 120ml milk
  • 2 eggs

Stage 2 - Cook the Fritters

Heat a frying pan over medium heat with a knob of butter. Using a spoon, scoop out portions of the batter and drop them into the pan. Cook for 2-3 minutes per side, until golden brown. Repeat until all the batter is used. Serve 2 fritters per person with your toppings of choice.

  • 1tsp honey
  • 1/2 banana

Quick Biff Tip

  • Make it vegan - swap honey for maple syrup, milk for alternative and eggs for 1 smashed banana 
  • Add a handful of chopped nuts for extra crunch and texture.
