Hot Cross Bun Burger With Beetroot and Feta

You can have a brioche burger bun, so why can’t you have a hot cross bun burger? Easter is here, and I want to share with you my super simple and quick veggie beetroot and feta hot cross bun recipe.

Ingredients

  • Curry
  • 100 g 100 Cooked beetroot, chopped

  • 50 g 50 Feta, crumbled

  • 50 g 50 Couscous

  • 150 g 150 Spinach, wilted

  • 2 tbsp 2 Breadcrumbs

  • 1 1 Vegetable stock

  • 1 1 Onion, finely chopped

  • 1 1 Large egg(s)

  • 1 1 Garlic, minced

  • 4 4 Hot cross bun(s)

  • 1 1 Large avocado, smashed

  • 1 1 Lemon, juiced and zested

  • Handful of mint, chopped

  • Red Chili, finely chopped, to taste

  • Oil to cook

Directions

  • Add the couscous, stock and boiling water to a bowl so it's just covering the top of the couscous; cover with a plate for 5 minutes.
  • Then add the beetroot, onion, lemon zest, egg, breadcrumbs and garlic in a bowl and combine well.
  • The mixture should be thick and bind well. If not, add more breadcrumbs. Then make it into burger shapes.
  • Heat a splash of oil in a large non-stick frying pan over low-medium heat and cook for 10 minutes on each side or until firm. Add the spinach at the end and cook for 3-4 minutes while stirring.
  • Meanwhile, combine the lemon juice, avocado, seasoning, chilli and feta and smash with a fork leaving lumps of avocado for texture.
  • Toast your hot cross buns just before the burgers are ready.
  • Add your beetroot burger, cooked spinach, smashed avocado, extra feta and seasoning and enjoy!
