Hot Cross Bun Burger With Beetroot and Feta

minutesYou can have a brioche burger bun, so why can’t you have a hot cross bun burger? Easter is here, and I want to share with you my super simple and quick veggie beetroot and feta hot cross bun recipe.

Ingredients
- Curry
100 g Cooked beetroot, chopped
50 g Feta, crumbled
50 g Couscous
150 g Spinach, wilted
2 tbsp Breadcrumbs
1 Vegetable stock
1 Onion, finely chopped
1 Large egg(s)
1 Garlic, minced
4 Hot cross bun(s)
1 Large avocado, smashed
1 Lemon, juiced and zested
Handful of mint, chopped
Red Chili, finely chopped, to taste
Oil to cook
Directions
- Add the couscous, stock and boiling water to a bowl so it's just covering the top of the couscous; cover with a plate for 5 minutes.
- Then add the beetroot, onion, lemon zest, egg, breadcrumbs and garlic in a bowl and combine well.
- The mixture should be thick and bind well. If not, add more breadcrumbs. Then make it into burger shapes.
- Heat a splash of oil in a large non-stick frying pan over low-medium heat and cook for 10 minutes on each side or until firm. Add the spinach at the end and cook for 3-4 minutes while stirring.
- Meanwhile, combine the lemon juice, avocado, seasoning, chilli and feta and smash with a fork leaving lumps of avocado for texture.
- Toast your hot cross buns just before the burgers are ready.
- Add your beetroot burger, cooked spinach, smashed avocado, extra feta and seasoning and enjoy!
