Perfect Poached Egg

Learn how to poach the perfect egg every time with my foolproof method. The fresher the egg, the easier it is to achieve a beautifully smooth, stringy-white-free poached egg. I also have a great tip that will save you time making poached eggs for a group!

Ingredients

  • 2 eggs (fresh is best)
  • Pinch salt

Biff's Tips

  • Bulk poaching. To prep ahead, poach the eggs for just 2 minutes so the whites set, then drop them into cold water. They keep for up to 2 hours. Warm them in simmering water for 30 seconds to serve.
  • Fresh is best. The fresher the egg, the neater it holds together, with fewer stringy whites.

Let's Dive In!

Step 1: Heat the water

Fill a deep saucepan with water and bring it to a gentle simmer, with small bubbles rising, not a rolling boil. Too much movement breaks up the egg. Add a pinch of salt.

Step 2: Prep the egg

Crack 1 fresh egg into a small bowl or ramekin so you can slide it in smoothly and keep the yolk intact. Stir the water in one direction to make a whirlpool, which helps the white wrap neatly around the yolk.

Step 3: Poach

With the water simmering, NOT boiling, slide the egg into the centre of the whirlpool. Leave it undisturbed for 5 minutes for a runny yolk, or 6 minutes for a slightly firmer centre. Repeat with the second egg.

Step 4: Serve

Lift out with a slotted spoon and drain briefly on kitchen paper. Trim any stray bits of white if you're feeling fancy, season well and serve. I love mine with Avo-No-Cado and bacon on a buttered flatbread.

Poached Egg FAQs

  • Do I need vinegar? No. A fresh egg and gently simmering water do the job without any vinegary taste.
  • Why is my egg stringy? The egg is probably older or the water is boiling too hard. Use the freshest eggs and keep it at a gentle simmer.
  • Can I poach more than one at a time? Yes, without the whirlpool. Lower them in one by one around the edge of a wide pan.
