Moroccan Ras El Hanout Spice Blend
Ras El Hanout, meaning "top of the shop," is a rich and aromatic Moroccan spice blend used to season meats, vegetables, tagines, and rice dishes. Packed with warm, earthy, and slightly sweet spices, this homemade version lets you customise the flavours to your liking. You can buy this blend in the supermarkets but you can make your own version with this recipe for a fraction of the price.
Ingredients
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 1 tbsp ground ginger
- 2 tsp smoked paprika
- 2 tsp ground cinnamon
- 1 tsp ground turmeric
- 1 tsp ground allspice
- 1 tsp ground cardamom
- 1 tsp ground black pepper
- 1 tsp cayenne pepper (optional, for heat)
- ½ tsp ground cloves
- ½ tsp ground nutmeg

Stage 1 - Mix the spices
Combine all the ground spices into a jar. Shake well until the mixture is evenly blended. This will last for 6 months.

Quick Biff Tip
- For a deeper flavour, buy the spices whole and toast the in a dry pan before grinding them.
