Directions
- Preheat your oven to 200°C.
Prepare the corn by peeling the corn and removing the husks and silks. With a sharp knife, carefully cut each ear of corn into halves or thirds, creating "corn ribs." Bake the corn ribs in the preheated oven for 20-25 minutes or until they are tender and slightly browned at the edges. You may want to flip them halfway through for even cooking. - Once the corn ribs are done, remove them from the oven. Garnish with chopped fresh coriander, garlic mayo, pinkles and tajin.
